Vinification:

The southerly zone of Somontano has an ideal climate where rainfall is lower than the rest of the Aragones region. Here, the maturation period for the grapes takes longer and allows for the main grape varieties, Cabernet Sauvignon and Merlot, to adapt perfectly and acquire their most elegant features.
The excellent climatic conditions in the area allow for an almost entirely ecological approach, under which a very strict yield control is monitored to maintain production between 7500-8000 kilos per hectare. The grapes are strictly selected and productivity is kept at a low yield. The use of organic practices aims at improving the quality of the finished product and Bodega Dalcamp has established its own quality control check in order to ensure continuity in the quality level of its products. Castillo de Monesma uses both French and American oak to complement the wine and have a balanced and approachable wine.

Tasting Notes:

Color: Very intense cherry color.
Nose: Deep aroma, concentrated, mineral, fruit preserve (raisins and redcurrant).
Palate: fine creamy toasted elements (chocolate, coffee, dates). Full and meaty in the mouth, tasting of spirits, clear tannins but reduced by the alcohol, tasty and long.
Other: Well suited to accompany matured cheeses, game meat, rich oven baked pasta dishes, etc.
