Castell de les Pinyeres is a blend of 25% Carinyena, 50% Garnatxa and 25% Ull de Llebre (Tempranillo) and Cabernet.
This wine has been made using traditional fermentation (with the own grape yeast). The wine was bottled in March 2002.

Today the Cooperative uses two main methods of vinification. Traditional fermentation begins when the bunches are destemmed at the winery. Alternatively, the bunches may be kept in tanks to permit them to undergo carbonic maceration before pressing. The other method used is a low-temperature fermentation.
The Falset zone is very hilly and has a cold climate.
