Vinification:
This is a blend of 85% Carignan and 15% Grenache.
The fruits are selection of the best fruits from old vines. Picked in 15 kg lug-boxes, the grapes are taken directly to the cellar for more selection.
The fermentation and maceration of the grapes was done slowly and naturally. The malolactic fermentation was done in new French Oak barrels, aged for 17 months in oak barrels and another 24 months in the bottle before release. Unfined and soft filtration.

Complex aromas of ripe red and black fruits. |
Palate: |
It is also complex in the mouth, showing some black pepper, cloves, cacao with some typical Mediterranean notes. A well balanced wine with mature tannins, long and rich on the finish. |
Other: |
This is an elegant wine, it is well balanced and will complement a wide variety is dishes; Oxtail with prunes, wild boar sausages or boar Osso Bucco, Puy lentils with duck confit. It will also pair well with slow roast shoulder of lamb or any grilled meat. |
