Vinification:

Sycar is a blend of 50% Syrah and 50% Carignan, hence its name created from the two varietals. It comes from old, low yielding vineyards.
The wine was fermented using the indigenous yeast from the fruits and macerated for 25 days at 26ºCentigrades.
Aged for 12 months in second fill 50% French and American oak barrels, the aged in the bottle before release.
