Vinification:
The Rapolao vineyard is one of the coolest vineyards from Castro
Ventosa, it is located on a north facing steep slope. The vineyard is
co-planted and the main varietal is of course Mencía with a small
percentage of Estaladiña, Garnacha Tintorera and Souson in the
mix.
Fermented in large oak barrels, 100% full cluster fermentation
using indigenous yeasts. Aged for a year in used French oak
barrels.
183 six packs made only.
Tasting Notes:
| Color: | Deep violet. |
| Nose: | It is earthy and flowery with violets and lavender, hints of mandarin and incense. |
| Palate: | Fresh, delicate and medium bodied. It is elegant, bright red fruits dominate with hints of spices and licorice. |
| Other: | This is a delicate Mencía, made in a Burgundian style. It will pair well with seared duck breast, tomato tart, anything with shiitake mushrooms or any mushroom based dish. It will also go well with boeuf bourguignon. |
