Vineyard: 530 meters above sea level.
Soil Type: Sandy soil.
Vine Age: pre-phyloxeric vinyard.
Irrigation: No irrigation
Harvest Date: 1st week of September.
Yield: 1 500 kg/ha.

Vinification:

La Cova de la Raposa is a pre-phylloxera single vineyard, with
extremely low yields, the total production is 500 bottles. This is an
85% Mencia wine blended with other local varietals such as 3%
Alicante, 2% Gros Cabernet, locally known as Bastardo, and the
rest is a mix of other local grapes.
Handpicked in the early hours, fermented in open 500 liters French
oak barrels, long maceration up to 90 days long. Aged in French
oak barrels for 12 months.
Made using traditional methods especially stomping the grapes.
This wine was not clarified or filtered prior to bottling, 500 bottles
made, the bottles are numbered by hand.
La Cova de la Raposa as a wine is a true representation of the
terroir it comes from planted against a steep south facing slope and
influenced by its unique soil and micro-climate.

Tasting Notes:

Color: Bright violet.
Nose: Rich bouquet with dark berry, five spice and smoky
minerals with white pepper.
Palate: It is focused and pure along with rich dark fruits. It is
bold and fresh at the same time. Lingering finish with
fine tannins and grip.
Other: This wine will age well, pairs well with game and
wintry dishes.
