Soil Type: Chalk and sand.
Vine Age: Over 100 years old.

Vinification:

La Cova de la Raposa is a pre-phylloxera single vineyard, with extremely low yields. This is an 85% Mencia wine blended with other local varietals such as 3% Alicante, 2% Gros Cabernet, locally known as Bastardo, and the rest is a mix of other local grapes. The total production of this wine is 700 bottles.
Handpicked in the early hours, fermented in French oak barrels and aged also in French oak barrels for 20 months.
This wine was not clarified or filtered prior to bottling.

Tasting Notes:

Color: Deep opaque purple.
Nose: Displays a singular array of aromas, from Asian spices, ripe cherry, violets, as well as sandalwood coupled with an underlying minerality.
Palate: Intense ripe raspberry and blackberry flavors combined with a clear spiciness. A silky texture, with outstanding finish & persistence. Pure elegance and delightful.
Other: An ideal wine for cellaring, will only improve over time, maybe enjoyed for the next 20 to 25 years.
A remarkable wine that will complement a wide variety of dishes from rich meaty dishes to spicy flavors.
