1998 Blend

Viticulture

Vineyard: North facing (sun all day)
Soil Type: Bokkeveld shale
Vine Age: Each varietal planted in July (winter) of 1993
Irrigation: Drip Method
Harvest Date: March 3rd; February 19th; & February 3, 1998 respectively.
Yield: 6.2 tons/ha to 8.5 tons/ha.

Vinification:

Stalks and stems removed and berries only lightly cracked.
Yeasts were added and fermentation was completed in stainless steel tanks.
Various primary fermentation details, refer to separate varietals.
After fermentation, wine was racked off skins, skins went into press, both pressed juice and wine were combined in tanks
Malolactic culture was then inoculated and wine was left in French oak for various lengths of time.
Blend of 50% Cabernet Sauvignon; 25% Cabernet Franc; and 25% Merlot
Bottled in October 24, 1999; making 545 cases

Tasting Notes:

Color: Deep center, with beautiful rim.
Nose: Woody spices, with nutmeg, raspberry, and blackcurrant accents encased in deep forest scents of wet bark and moss.
Palate: Rounded elegance, complex and well-structured, still youthful
