Vinification:

These grapes were harvested in the early morning at 25° Balling in order to capture all the freshness from the grapes.
The grapes were then brought into the cellar and underwent skin contact and cold maceration for 3 to 4 days to extract soft tannins and ripe fruit flavors before allowing fermentation to begin. Throughout vinification handling was kept to a minimum to ensure that true fruit flavors were retained. The wine was matured in one and two year old French barrels for 15 months.

Tasting Notes:

Color: Deep red.
Nose: Intense fruity aromas.
Palate: It is dense but well balanced, packed with fresh fruity flavors and the typical peppery notes.
Other: pairs particularly well with oxtail, stews, BBQ or duck.
