Viticulture

Vineyard:
Soil Type: Bokkeveld shale.
Vine Age: Planted in Winter 2000.
Irrigation: No irrigation
Harvest Date: March 2005.
Yield: 8.5 tons per hectare.

Vinification:

These grapes were harvested in the early morning, at 25 degrees balling, late March 2005.
The grapes were then brought into the cellar and underwent skin contact and cold maceration for 3 to 4 days to extract soft tannins and ripe fruit flavors before allowing fermentation to begin. Throughout vinification handling was kept to a minimum to ensure that true fruit flavors were retained. The wine was matured in one and two year old French barrels for 9 months.

Tasting Notes:

Color: Ruby
Nose: Aroma of ripe plum and blackcurrant with nuances of white pepper and wood spice.
Palate: Soft and well balanced on the palate with a good length.
Other: Sourced from low yielding vineyards, this wine is an excellent example of New World style cool climate Shiraz. Wildekrans believes that there are no rules, experiment to your hearts content.
Duck, Stews, Oxtai, Barbecue meat, Matured yellow cheeses.
Ageing potential between 5 to 8 years.
