Vineyard: Planted with 3 500 vines/ha
Soil Type: Klapmuts, Estcourt, Kroonstad.
Vine Age: 25 years old.
Irrigation: Drip Method
Harvest Date: February.
Yield: 6 t/ha

Vinification:

Harvested early in the morning, gently pressed and fermented at 12° centigrade in temperature controlled stainless steel tanks to preserve the clean fruit flavors that are typical of Bot River area.

Tasting Notes:

Color: Light yellow with hints of green.
Nose: An array of green pepper, passion fruit and gooseberries .
Palate: Complimented by an intense mouthful of flavors. The complex taste and superb fruit and acid balance gives a long and lingering finish.
Other: The Walker Bay/ Bot River area benefits from a cooler climate which is ideal for elegant Sauvignon Blanc. Pairs well with Fettuccine with Gorgonzola and Pine Nuts, Chicken Limone, Norwegian Salmon or Crayfish.
