Viticulture

Vineyard:
Soil Type: Bokkeveld shale.
Vine Age: 25 Years.
Irrigation: No irrigation
Harvest Date: Early morning in February at 21 - 24º Balling.
Yield: 8 tons per hectare.

Vinification:

Cool climate and low yielding. Twenty five year old vines create this delicately balanced wine.
Gently pressed and fermented at 12ºC in temperature controlled stainless steel tanks to preserve the clean fruit flavors that are typical of Wildekrans wines. Lightly oaked for three months.

Palate: A delicately balanced wine with a medley of peach apricot including subtle tropical flavors with a crisp long, lingering finish.
Other: There are no rules, experiment to your hearts content. Pasta Dishes, Three Cheese Bake, Melanzani, Assorted Sushi, Deep Fried Calamari, Fish Chowder, Camembert and Blue Cheese, Stuffed Mushrooms.
The wine ageing potential is two years.
