Vinification:

These grapes were harvested in the early morning, at 25 degrees balling, late March 2005.
The grapes were then brought into the cellar and underwent skin contact and cold maceration for 3 to 4 days to extract soft tannins and ripe fruit flavors before allowing fermentation to begin. Throughout vinification handling was kept to a minimum to ensure that true fruit flavors were retained. The wine was matured in one and two year old French barrels for 9 months.

Tasting Notes:

Color: Intense deep ruby red in colour
Nose: This wine is fruit driven with aromas of ripe berries and delicate undertones of cigar box.
Palate: A mouth filling palate of cherries and spice with a rich defined tannin structure leaving a lingering after taste
