Viticulture

Vineyard: Bot River Ward in Walker Bay, 3 333 vines p/ha density.
Soil Type: Bokkeveld shale.
Vine Age: 12 years old.
Irrigation: Drip Method
Harvest Date: March 2006.
Yield: 6 t/ha

Vinification:

This is a blend made of 90% Cabernet Franc and 10% Merlot.
After harvesting the cool grapes are brought into the cellar and then undergo skin contact/cold maceration, for 3 to 4 days to extract soft tannins and ripe fruit flavors before allowing fermentation to begin.
Throughout vinification handling was kept to a minimum to ensure that true fruit flavors were retained.
The wine was aged for 9 months in French oak barrels.

Tasting Notes:

Color: Light red.
Nose: It is fresh with ripe fruity aromas.
Palate: This wine displays spicy mocha aromas revealing a rich palate of dark berried fruit and finishes with classic firm tannins.
Other: Great pairing with fillet mignon, Hungarian Beef Goulash, polpettes in Tomato Sauce or pasta dishes.
