Vinification:

After early morning harvest the cool grapes are brought into the cellar.The juice is left with the skins for contact and a cold macerration takes place for 3 to 4 days. This process is to extract soft tannins and ripe fruit flavours, before allowing fermentation to begin. Throughout vinification the handling of the wine is kept to a minimum to ensure that true fruit flavours are retained. This wine has been matured in French oak barrels for 9 months, it is a blend of 89% Cabernet Franc and 11% Merlot.

Tasting Notes:

Color: Deep ruby red
Nose: Packed with big up front spicy black and red berry fruit.
Palate: Excellent, well structured Bordeaux blend palate.
Other: Food and wine pairing: Sizzling Spare Ribs with BBQ sauce or Lamb Skewers on the grill.
The wine has an ageing potential of 4 years.
