Vinification:

After early morning harvest the cool grapes are brought into the cellar. The juice is left with the skins for contact and a cold maceration takes place for 3 to 4 days.This process is to extract soft tannins and ripe fruit flavours, before allowing fermentation to begin. Throughout vinification the handling of the wine is kept to a minimum to ensure that true fruit flavors are retained.
This wine has been matured in French oak barrels for 9 months, it is a blend of 83% Cabernet Franc and 17% Merlot .

Tasting Notes:

Color: Deep ruby Red.
Nose: Zesty aromas of ripe raspberries and strawberries, which continue onto the palate.
Palate: Excellent, well structured, fruit balanced tannins give the wine a long, lingering finish.
Other: There are no rules, experiment to your hearts content. Fillet Mignon, Hungarian Beef Goulash, Italian Meatballs in Tomato Sauce, Parmesan Chicken, Blue Cheese and Brie, Pasta with bacon and mushroom sauce, Chicken Liver Pate.
This wine has an ageing potential of four years.
