Viticulture

Vineyard: East facing (for morning sun); cooler orientation.
Soil Type: Bokkeveld shale.
Vine Age: Planted in July (winter) of 1994.

Vinification:

Stalks and stems removed and berries only lightly cracked.
Fermented on skins warm in stainless steel tanks for five days.
Juice pumped through skins twice daily for 30 minutes for five days for color extraction
After fermentation, skin contact was allowed for a further weeks via racking and the juice and skins were pressed lightly in a bag press.
This juice went back into the tanks and malolactic was then started in the tanks and completed in the barrels.
Wine was matured in medium toasted new French Oak from the Demptos Cooperage for 11 months.

Tasting Notes:

Color: Huge color extraction, deep red, almost purple.
Nose: Big fruit, ripe plums and berries with depth.
Palate: Cool climate pinotage, lots of complexity, satin smooth tannins, soft and full, a perfect balance between fruit, tannins, and acidity.
Other: This is a massive, well-extracted wine that can be drunk now, but will also age well for 12 to 20 years.
