Viticulture

Vineyard:
Soil Type: Grenache from decomposed granite at 450m, Shiraz from ancient gravels onto clay
Vine Age: Grenache 50 and Syrah 8 years old.
Irrigation: No irrigation
Harvest Date:
Yield: 2 to 3 t/ha for the Grenache and 6 t/ha for the Syrah.

Vinification:

A hand-picked selection of the first ripe fruits, taken to the cellar and cold soaked prior to fermentation, transferred into new French oak barrels for 12 months. At this point a further selection takes place before blending and the final blend goes back to new barrels to marry and harmonize over the following 12 months. After almost 2 years languishing in a cool cellar the Gypsy is stable with the oak and the intense fruit totally harmonized.

Tasting Notes:

Color: Rich, thick color.
Nose: Some hints of nutmeg and cinnamon.
Palate: A very concentrated, focused blend, with layers of deep fruit.
Other: Deliciously matched with risotto, truffled pasta. Ideal for flavorsome grills, lamb and beef. Must be decanted when still young, will age very well.
