2009 Sauvignon Blanc

Viticulture

Vineyard: South / South West orientation
Soil Type: Duplex soils, fine sandy loam on a clay base
Vine Age:
Irrigation: Drip Method

Yield: 8 t/ha

Vinification:

Grapes are hand picked over a progressive ripening curve to capture the natural acidity and show the riper, tropical fruit flavor of Sauvignon Blanc. The focus is on obtaining freshness and balance.
After crushing, pumped through mash-cooler straight to press for draining. The free-run juice is settled and fermented separately from pressings.
Extended lees contact after fermentation for about 8 weeks to add texture to the wine.
