Viticulture

Vineyard: South-south-west orientation, on the Helderberg in Stellenbosch.
Soil Type: Clovelly – (deep yellow sand).
Vine Age: 35 years old.
Irrigation: Drip Method

Yield: 4 to 6 t/ha

Vinification:

Hand harvested, with careful selection. Barrel and tank fermented and left on the lees (9 months French oak, 20% new) matured on secondary lees for a rounded complexity.

Tasting Notes:

Color: Golden hues.
Nose: With melon and spicy baked apple aromas.
Palate: Layered, with mineral notes enhanced by honeycomb and caramel flavors from lees contact. This wine is has an harmonious balance achieved between fruit and delicate oak/vanilla flavors, with sufficient body to enhance even spicy and full flavored meals.
Other: Can be served with many varied spicy dishes,rich fish or chicken dishes. Ideal with crayfish, prawns.
