Vinification:
Spontaneous natural yeast fermentation started after 4 days cold soak. Fermented up to max. 31ºCentigrade. The cap of skins were punched down manually 2 - 4 times a day for 14 days. Wine was then drained directly into 2 x 225 Liter barrels together with single pressing from traditional basket press.
