Vinification:

Grapes are lightly crushed and allowed skin contact for three hours before a gentle pressing in a traditional basket press takes place. Sulphur and dry ice are added and natural settling is allowed for two days. Fermentation takes place in 225 Liter barrels, 18% new oak, 2/3 French, 1/3 American barrels.

Tasting Notes:

Color: Appealing pale yellow.
Nose: The nose shows damp hay, rich apricot and honey, subtle oak and a complex mineral character.
Palate: The palate is rich and full bodied with a long finish and hint of sweetness.
Other: Extremely versatile food wine - excellent with lightly spicy Thai style dishes, seafood and most white meats.
