Viticulture

Vineyard:
Soil Type: Deep red Hutton and raised alluvial stone terrace.
Vine Age: 5, 6, 9 and 15 years.
Irrigation: Lightly irrigated
Harvest Date: 26 / 2 / 03 – 14 / 3 / 03 @ 23.5 – 26.3° balling.
Yield: 3 - 7 t/ha

Vinification:

The growing and ripening period was near perfect. A light irrigation at veraison ensured the grapes got through the late warm, dry summer without too much stress. The wines have intense fruit, excellent structure and great maturation potential.
100% destemming and crushing by hand directly into 2 ton open top fermentation tanks. Spontaneous natural yeast fermentation @ 30ºC with the cap of skins punched down 2 – 5 times a day for 8 to 16 days. Wine drained directly to barrels together with single pressing from traditional basket press. All wine undergoes malolactic fermentation in the barrel. 35% new French oak and 5% new American oak was used from high quality coopers. Time in barrels 22 months, which included several rakings to gradually clarify the wine and assist maturation. This wine was bottled unfiltered by hand on the property.

Tasting Notes:

Color: Deep, dark, brooding red color.
Nose: Cassis, ripe mulberries and tobacco and cedar nose.
Palate: Intense fruit flavors and firm persistent tannins follow through to a long dry finish.
Other: Probably best between 2008 – 2018.
