Vineyard: North East facing bloc.
Soil Type: Deep red Hutton and a raised alluvial stone terrace..
Vine Age: 5 year old.
Irrigation: Lightly irrigated
Harvest Date: From the 3rd to the 10th March.
Yield: 8 and 6 t/ha

Vinification:

VINEYARD BLOCKS
Mostly from the neighboring Keermont vineyard. The balance from Pru Crawley’s “heap of stones” vineyard a bit further down the Blaauwklip valley. Both vineyards lightly irrigated at veraison.

VINTAGE CONDITIONS
The growing and harvest season was near perfect.

PRODUCTION
Handpicking into 20 kg lugboxes. Destemming and gentle crushing directly into small 2 ton open top fermentation tanks. Spontaneous natural yeast fermentation at maximum 31 degrees Centigrade. With the cap of skins punched down manually two to four times a day for an average of thirteen days.
Wine drained directly to barrels together with single pressing from traditional basket press.
All our red wine undergoes malolactic fermentation in the barrel. This helps to integrate the new oak component and fix color and flavor compounds.
10% new French oak and 10 % new American oak was used.
Time in barrel 19 months with only a single racking.
This wine was bottled unfined and unfiltered by hand.
Bottling date: 21 / 10 / 2004.
Production: 580 cases.

Tasting Notes:

Color: Attractive deep red color.
Nose: Intense berry, spice, liquorice and wild herb nose.
Palate: Full palate packed with complex fruit and soft, ripe tannins. Finely textured with a long warm finish.
Other: Probably best between 2005 & 2010. Ideal with a variety of strong flavored (including lightly spicy) meat dishes.
