Vinification:

Albert Ponnelle produces wines using organic and biodynamic methods.
Harvest is done by hand in the cooler hours of the morning.
After harvesting, the grapes are taken to the cellar, de-stemmed, pressed and fermented slowly over a couple of weeks.
Aged for 12 months in oak barrels. Slightly filtered before bottling.

Tasting Notes:

Color: Light gold and bright.
Nose: Almond, fern and white flowers.
Palate: Supple, well rounded and elegant, it is fresh and floral with a lingering finish.
Other: This Santenay will pair well with pasta or risotto with mushrooms, poultry with a creamy sauce or cheeses such as Comte, Beaufort and goat cheese.
