Vinification:

Albert Ponnelle produces wines using organic and biodynamic methods.
Harvest is done by hand in the cooler hours of the morning.
Strict sorting of the fruits at harvest, the fruits that are not to the required quality standard are discarded. Long maceration process, 75% of the grapes are de-stemmed, indigenous yeast is used to ferment, the fermentation phase took 15 days to complete.
Aged in barrels over 14 months with 20% new barrels.
Bottled using gravity, no fining or filtration.

Tasting Notes:

Color: Intense crimson.
Nose: Aromas of cherry and blackcurrant with notes of game and spices.
Palate: Dense, elegant with a good structure and a silky finish. Great aging potential.
Other: A racy wine that will pair well with any meat that is richly flavored such as lamb, duck, game, venison or any elaborate dish with a seasoned red wine based sauce. It will also go well with intense cheeses with a soft texture such as Langres or Epoisses.
