Vineyard: AOP Picpoul de Pinet
Soil Type: Homogeneous Limestone, Clay soils opening out on the sea.
Vine Age: 10 years old.
Irrigation: No irrigation
Harvest Date: 20th of September.
Yield: 58 hl/ha.

Vinification:

Fruit selection in the vineyard then again at the cellar. Grapes are harvested at night to preserve the freshness and fruity aromas. Cold maceration, fermentation at low temperature and storage in thermo-regulated vats. Filtration and preparation of wines prior to bottling on the estate.

Tasting Notes:

Color: Pale, hints of green on the rim.
Nose: White peach and zesty lime peel.
Palate: It is fresh and crisp with a pleasing texture and lively acidity. Exotic fruits, grapefruit, citrus and green apple.
Other: Picpoul de Pinet is a great aperitif, it also goes particularly well with salty dishes, especially fresh seafood or charcuterie. In France it is often served with oysters from the Thau lagoon.
