Viticulture

Vineyard:
Soil Type: Clay and sandstone.

Yield: 30 to 35 hl/ha.

Vinification:

This is a blend of 60% Syrah, 20% Mourvèdre and 20% Grenache.
The fruits are de-stemmed right after picking to maintain the freshness, produce an authentic wine and preserve natural fruitiness from the grapes while limiting the harsh tannins often found in Minervois wines.
The berries are cold macerated, to extract color and aromas, before the traditional fermentation takes place. Fermentation is done in temperature controlled tanks over ten to twenty five days, remontages twice a day.
The Syrah is aged in oak barrels, mainly older barrels, before bottling. Each varietal is made separately and blended prior to bottling.
Bottled in June 2013.

Tasting Notes:

Color: Deep ruby.
Nose: Rich in fresh red berries, elegant and subtle aromas.
Palate: Well balanced with rich red fruits and silky tannins.
Other: A great wine to pair with grilled meat especially lamb cutlets.
