Vinification:
This is a blend of 60% Grenache blanc, 35% Vermentino and 5% Roussanne.
Picked at optimum ripeness, cold maceration 6 to 8°Centigrade for 12 hours, fermented in Epoxy-resin-lined-cement vats and temperature controlled between 16 and 17°Centigrade.
Left on the lees for six months before bottling.

Complex, fruity, subtle lilac aromas with some apricot and grapefruit. |

It is bright and generous with lilac overtones, hints of fruit such as peach, good minerality with a pleasing finish. |

It will pair well with fish in a white sauce, poultry in a creamy sauce, pan fried fresh foie gras or hard cheese. |
